Lotus's Journal, 01 February 2008

hey what's up everyone? I'm doing pretty good, lost a little weight this week, not much but I'll take it! I started the week out at 139.2, this morning it was 137.8. At least it is going in the right direction, and I'm not starving. Especially considering my stress cheating the other day, and that i have not been exercising quite as much this week. I did 30 minutes of kickboxing today while kaelyn took a nap, and I am about to go do some aerobic dance(Wiggles workout!) As some of you have heard, she has a middle ear infection and has been feeling pretty bad. She acted like she felt a lot better today though, and she didn't run a high fever.
I have pretty much been waiting on her hand and foot. I feel bad for her, so I have been letting her get away with way too much. She is really milking the whole being sick thing. Don't beleive me?
Ok here's an example. The other night it was time for bed, and told her it was time to brush her teeth, and she said "Hungry mama! Need a snack!" Well she hadn't eaten well at all that day, so I wasn't about to deny her. I asked her what she wanted. "I cream," she said(ice cream). So I got her a scoop of frozen yogurt with some chopped banana. Normally she would eat it in a second. But when I brought it to her she refused and says"No, mama. Toast. I need toast!" OI! So LIKE A SLAVE I go back in the kitchen and make toast, with butter and cinnamon. I bring it back to her and what does she say?? "No mama. Peanut butter toast!" AAAAGH! i am about at the end of my rope at this point, but not wanting to waste it I go back AGAIN and put peanut butter over the cinnamon. Ok she takes TWO BITES an says, "Full mama. Fill up water." She already has a cup of juice, but she wanted a cup of water too. I swear she just likes to boss me around! What a turd!
Well it's pretty funny now but at the time it was very frustrating. She has been keeping me on my toes, I'm telling ya!
Oh, I found a good idea online today to reduce the fat in peanut butter. You whip it with honey, dry nonfat milk and water, and it is still really good. It worked awesome! I measured it all so I could figure out the calories. I whipped together two cups of peter Pan reduced fat peanut butter, 2 cups of water, and a cup of sugar free maple syrup, which is like 35 calories per 1/4 cup,
I didn't have any dry nonfat milk, so I used a tablespoon of nonfat sugar free butterscotch instant pudding. turned out great! The calories came out to 36 calories and 18 fat calories for 2 tbs, and it is really good! You can still overdo it, but at least you can have more of it with less damage, and it works great for a dip for veggies or apples.

I don't think the nonfat milk was 100% necessary, just makes it a bit thicker. The butterscotch pudding mix gave it a good flavor, I don't think i'd try it any other way now!
