On a roll this week. Exercised every day so far. Just walked over 3 miles in 45 minutes on my lunch hour, fueled by the avocado chicken salad I made last night. This stuff is awesome! And I hate chicken salad. Not any more!

Absolutely! Here is a link to the recipe - it's very simple. Note that I used all mayo and no Greek yogurt (replaced the Greek yogurt with more mayo to get more fat). Here it is: Healthy Avocado Chicken Salad Ingredients: 2 cups shredded rotisserie chicken 1 avocado 1/2 tsp garlic powder 1/2 tsp salt 1/2 tsp pepper 2 tsp lime juice 1 tsp fresh cilantro 1/2 cup mayo Directions: Mix all dressing ingredients in a large bowl (everything but chicken and avocados). Combine diced avocado with shredded chicken. Pour dressing and stir until well incorporated. Cover and refrigerate for at least 20-30 minutes to let all those yummy flavors blend together.

that is amazing! I actually don't care for the flavor of avocado but love chicken salad. I may try this just for the healthy combo.

OMG! Just reading over the ingredients makes my mouth water. :) Curious if you make your own low-carb mayonnaise or not? Thanks again, it's much appreciated

I use Duke's mayonnaise. It has zero carbs and sugars. I'm making more of it this weekend and will use it for my lunches at work next week. I do recommend hot rotisserie chicken over canned, though certainly both will work.
