Such a learning process - last night I decided I was going to make low carb biscuits and gravy for the family. That's one of my son's all time fave's. Used dixie Diner's low carb biscuit mix and a recipe for sausage gravy I found on here. UGH!! The biscuits were horrible - check that on the DO NOT ORDER AGAIN list!! And the gravy, while it had a good flavor, was just so dang rich from all the cream, noone could really choke much of that down either - lol. Live and learn. There definately ARE some really good low carb products out there, but this was most certainly NOT one of them. LIve and learn.
*On a side note I was rather frustrated by the failed dinner, and then by my hubby coming home with the news that we have car trouble AGAIN - so my dinner ended up being cheezits! UGH - I am STILL such an emotional eater. have to find a band-aid that doesn't involve food!!!!!!!

Another humorous side note - those biscuits (just in case anyone is tempted to order and try anyway..) well my dogs wouldn't even eat them - and they eat ANYTHING - have NEVER seen them turn anything down before - lol!

You could try half cream, half unsweetened almond milk to make the gravy less rich. Also, I like to put sausage gravy over scrambled eggs instead of biscuits.

I make gravy too and using all cream is WAY too rich. I use some chicken broth along with the cream and it comes out great.

As for the emotional eating, when I want something crunchy I cook small teaspoon sized scoops of Cheddar cheese in a non-stick omelet pan until they are crispy like crackers and munch 10-15 of them. They are just like a cheezit flavor wise and give you the salty crunch you are craving. Hang in there!

Awesome ideas - thanks!! It may take me (and my poor family) a bit to work up the courage to try it again, but I'll be armed and ready when the time comes. May have to try the "cheezits" as soon as I get home!

I'm sorry for your frustraiting dinner. I'm not a big cook so when I do get up the gumption to cook a big dinner it better be AWESOME! And it sucks when it's not. I like the baked cheese oceangator23 said, but they're not right there to grab and go. I wonder if I make a big batch and put them in snack size baggies if they would stay crispy and be on hand. Worth a try. Sorry about your car-mine went out a few weeks ago too. $$yikes! Hope today goes better for you. :)

Did the from scrathc cheezits for lunch -YUM!!! I forgot how good those can be when you do them right - lol!

Thanks RK - so far so good - car is at the shop, so waiting for the verdict, but the mechanic didn't seem to think it was a BIG thing - WHEW!
