Good evening! This was a really busy day, but still nice to be off work :) I was up at 4am, and did a cardio sculpt DVD and kettle bell. Tonight's dinner...Mediterranean chickpea salad with Za'atar and eggplant. Have a great night!

I'd love to know how you cooked the eggplant. I try and try, but somehow my eggplant always comes out either sour or inedibly soggy.

@EFudd..I've had the same thing happen with my eggplant. This recipe said to slice no thicker than 1\4 inch thick, sprinkle each slice generously with salt, let them sit for 30 minutes, and then rinse and blot dry before frying. This caused them to sweat out the excess moisture. I used a light olive oil to fry them and they turned out great.
