I agree, it does look good. However, since I am new in thissociety, I have 2 questions, maybe 3: 1- What is that in the middle of the plate, is it sweet potato? 2- Wondering about the calories count in this meal? Bonus question: 3- I am on a potassium restriction diet and I am having heck of a time trying to locate a reliable source for potassium count in foods. Can anyone provide a RELIABLE site where I can go to for that? Thank you y'all, and I hope Billie enjoyed this!

Calorie count is 394 Butternut squash is in the middle. Less calories than a sweet potato. The vegetables were all roasted in the oven. Skewers were portioned out to about 4oz. It was fantastic. As far as potassium, I'm unsure.
