Sorry for the delayed response. Having too much fun. We bought cheeses I had never heard of before and I have had A LOT of gourmet cheeses (blush). I will post them when I get a chance. The great thing about fine cheese is that you just need such a tiny bite to enjoy complex flavors but it 'counts' diet-wise like a tiny cube of Cheddar. Also the richness makes small amounts very satisfying.

This is the infamous Carmel cheese shop in Carmel-by-the-sea, California. The staff fly all over the world to taste and purchase the best cheeses available at any given time. Some of the selections we tasted were $47 and up a pound. When you walk into this place, you don't need to ask, you are automatically offered samples hand sliced, shaved etc. just for you. It keeps going as long as you want. I posted the cheeses we bought . Have been coming here every summer since I was a toddler.
