Got my fresh laid eggs for the week :D Large and XXL. I always get excited when I crack them and get a double yolk :D

Nice ... how do you count those double yolk eggs? As one or two? I wondered about that when I baked a cake and got a double.

I input my eggs grams by weighing them after cooking them instead of adding them as 4 x large/jumbo/etc. By using weight instead of size, its more accurate. Not sure how that would affect baking but today I used the large eggs which were all single yolk but their weight after boiling and shelling them was 220g. I prefer drying the XXL ones which have double yolk because I like having them underdone so i can use the yolk as a sauce when I pop them.

I also get these super jumbo double yolk eggs from a farm in Midlands. Best eggs ever. Taste like eggs and not blah like the shop eggs. I used once for baking and found no difference really. I used 3 eggs instead of the recipes 4 and all turned out well.
