Oh my gosh, this has turned out to be the best day. It's been busy, but not hectic or stressful.
It's storming now, and I'm listening to Stevie Nicks while sketching a new painting. Life is good.
I'm also pondering what to fix for dinner...most likely my red cabbage tacos.

Hi Charlyne-I use Morningstar crumbles, small corn tortillas, Mexican blend cheese, and red cabbage. I grill the tortillas a little on each side so they'll be flexible without breaking. I brown the crumbles per instruction with a little Ortega taco sauce. To assemble in the shell, we add the crumbles mixture, cheese, lots of red cabbage, and top with taco sauce. My hubby usually adds lettuce and sour cream :)

Morningstar is a brand of vegetarian foods I buy. I use it in place of hamburger meat for tacos, spaghetti, etc. The tacos are really good and so easy. I used lettuce from our garden :D
