Well, we didn't go hiking today, but I did get in a great swim: 1.22 miles!!! This was such a great weekend. Eventhough I made some bad choices, I never went too far over my RDI. I just had to make some SUPER good choices right after.
I happened to have made some kick-assed Quinoa Tabouleh to go with dinner...and then forgot about it while the guests were still over. So now I've got a HUGE bowl of salad left. I don't think I can finish it before it will go bad. I'm pretty sure you can't freeze tabouleh. :-(
