QUESTION!? Would you hire an assistant manager working for a restaurant or a non-manager person from a hotel? Pretend you are a hotel owner and wanting to hire a managing staff.

I can never answer these things straight up! Sounds like some of those questions they ask on pre-employment tests. It all depends - you need more info. It depends on what kinds of duties these people have had in their past jobs and how similar those duties are to what they'd be doing for the hotel. I've seen "assistant managers" who were little more than glorified cashiers with store keys and I've seen "non-management" personnel who were basically underpaid managers without a title! So, it all depends on their backgrounds and what they've accomplished. It also depends on whether you're looking for entry-level management or something higher.

I'd hire the person who seems like they care and are motivated to do a good job.

You would hire the one that doesn't know anything about the trade so you could train them your way instead of them wanting to do the old way they were use to doing it. So, with only these two choices I would say the assistant from the restaurant.
