I got creative with a box of suddenly grain salad tonight. I cooked the grains as directed but threw out the dressing mix , way to much salt. I added in my Chicken, a little bit of mandarin oranges, a Tsp of slivered almonds and a Tbs of dried cranberries. I added 4 Tbs of lite strawberry vinaigrette. divided it into 4 portions and had it and some veggie for dinner. very filling. and it tasted good besides.

Salt is 0 calories. Your chicken appears to have been half a cup at 140 calories, the mandarin oranges cost 90 calories, and the "lite" vinaigrette cost another 140, the total for those 3 alone is 370 calories. You almost defiantly would've been better off using dressing mix. At least calorie wise.

Danit how to undo posts... I accidentally looked at and used your lunch as reference... Even so, using only what you listed under dinner - the carrots, your creativity utilized 240 calories, not as much as your lunch version of the same items, you still would've probably been better without the creativity.

Depends on what one is trying to change. If salt is an issue for someone, whether for BP concerns or water retention or whatever, then her solution makes sense. Also, it tasted good.

For me salt is a huge issue. I have Leukemia and the medication causes huge water retention issues. I am extremely sodium sensitive. The tomato and parm dressing would have shot up my blood pressure and water retention more then the lite vinaigrette. plus it was a healthy salad. I eat chicken a lot so if I cook enough to stretch I can add a protein to lunch and dinner, which I don't mind. Thanks for the input.
