A little late journalling today. Had a fairly busy morning. lol. My almost 2yr old managed to pee through her pj pants. And completely soak them over night. How a child that small contains enough pee to not only completely saturate an over-night diaper but soak her pants that way, I just don't know. lol. And following that she decided to climb up on the counter and add more butter to her piece of toast. 1/2 a stick of butter on a piece of toast. lol. And all the way up to the elbows on my little girl. It was so funny I couldn't be mad. XD My foot is about a 3 on the 1-10 achy scale today. And it's a beautiful 65 degrees outside. I can even hear the birds chirping and the sun is starting to come out from behind the clouds. All in all a perfect park day! So I'm going to dose myself with ibprofen at lunch time, and when the pudding monster awakens from her nap. Just going to walk the 1.2 mile track and ease back into more distance, and jogging.

Going to make flounder for dinner tonight. If anyone has tips on eliminating the fishy flavor I'd appreciate any advice. XD Baking/pan frying fish is completely new to me. Growing up all my fish was battered and deep fried. :P

Jada, flounder is pretty delicate so I just put enough EVOO in the bottom of the pre heated non-stick pan, put a little seasoning on the fish (we like Mrs. Dash -no salt) and do a quick pan saute. I did sole that way last week and it was delicious! Oh, this is probably too late for you to get in time for dinner but keep in mind for next time!

I forgot to check before cooking dinner. lol. I ended up using a white vinegar, green onion, and butter marinade on filets for about 20 mins. A quick roll in panko crumbs and then pan fried with a little olive oil. Turned out delicious with absolutely no fishy flavor to it. I think pan fry/sautee is the way to with it. Not big fan of the baked fish I have done in the past. Maybe next time my bread crumbs won't crumble off in the pan. XD Paired with Garlic mash potatoes, and romaine/veggie salad.

Sounds like a yummy dinner my friend. Keep experimenting with the fish. You are in the best possible state for fresh fish year round! Enjoy!! I know you don't like the fishyness, you can always put a fresh squeeze of lemon in the pan when doing the shallow saute. Be careful about marinating for too long, the acid can begin to "cook" the fish prematurely....NOT good eats as Alton Brown (from the Food Network) would say!

I found the white vingear idea online and cut the marinade time back to 20mins instead of 30mins. It turned out really well excpet for the bread crumbs falling off. lol. The crumbs were tastey though piled on top of the fish. :D But I will keep experimenting with it. Since the vinegar turned out so well. I think I'll try adding some black olives into the marinade next time. And adding a little parmesan to the bread crumb roll too. As long as I can get my fish to taste like that every time I'd be happy eatting it all the time.
