Bought some stuff to make low-carb/sugarfree/low gi cupcakes for when I feel like eating something sweet again. :p
Liquid stevia (0 calories and seems to be the least unhealthy sweetener out there), coconut flour and vanilla extract.

I think I'm gonna make some tonight (I have a cupcake machine) and then freeze them so that if I feel like snacking, it will take a while until I can eat it - and hopefully I'll choose to have something healthy instead. :D

When I woke up, I had some almonds and cashews and a couple of hours later I had a salad. I bought fresh spinach yesterday so I'll have lots of spinach in the next couple of days haha. And apparently spinach is a lot better than having iceberg lettuce in your salad. Btw, the salad was just spinach, mushrooms and leftover avocado from yesterday (with a bit of olive oil on it). Tasted great, though. :D

I'll have cucumber with sour cream dip as a snack this afternoon (hopefully I'll like it, never tasted it) and this evening probably some more veggies & steak.

I never made any desserts so I hope I won't fail or accidentally burn the apartment down lol.


Edit: Made the cupcakes, 4 in total, taste could be better but hey it's sweet and about 120 calories per serving! Ate one & put the rest in the freezer. Guess I can't expect it to taste like a regular cupcake with "fake flour" (and horrible cooking skills) :p

Yum! What I like during sugar cravings is Primal Fudge - http://practicalpaleo.blogspot.com/2011/06/primal-fudge.html I replace the PB with Powder Peanut Butter from Amazon PB2 which is better than it sounds (45 cal per 2 tbsp).

Whoa! I'm gonna make that too! (I looked it up on Google cause links don't work in the comments). I can't find coconut oil anywhere though, and it's pretty expensive to buy it online since we don't have Amazon where I live

That's great that you're eating vegetables. I love spinach! Never forget to account the olive oil, which is probably the most caloric part of the salad. lol I always have a kitchen clock on as long as the fire is on in the kitchen, no matter how short the cooking time is (even 5 minutes) and I always have the clock with me if I leave the kitchen :). this was your first experiment. You'll soon start tweaking the recipe and improve them ;)

I always count all of the oil/butter I use, even the fat that's left in the pan, it's better to count too much than too little I guess :P

And I've just realized that I have forgotten to include the olive oil I use in the egg whites :P lol
