I am going to review some of the atkin foods I buy or make hope this helps others :) This is what I had yesterday :)

1/4 c. heavy whipping cream
2 eggs, beaten
dash of cinnamon
1 packet of splenda
1.5 oz of finely crushed pork rinds

Mix together, let sit 15 min. or more, you might want it thick, like uncooked oatmeal. Melt 3 TBSP of butter in a skillet. Spoon out onto skillet. Fry on both sides until done.
Batter makes about 5 - 8 small pancakes.

It was good if you ate it fast. If you take your time the last one gets a tad soggy.

Could you add the carbs and calories too for what you make? These would be out for me as I can't eat pork.

Oh yes I am sorry that I did not add that info.. For entire recipe, 29.825 total carbs, 22.80 fiber for 7.02 net carbs for entire recipe. •If you get 6 pancakes, it's 1.17 net carbs per pancake. •When doubling the recipe, 3 Splenda® packets is fine. •These can be baked in the oven (325 or 350 for about 20 minutes or until cooked through) rather than on top of the stove. •Obviously, if you get more or less pancakes, your net carb count per pancake will change.

There is one made with flaxseed no pork :) Single Flaxmeal Pancake 2 eggs beaten 2 tbsp flaxmeal 1/4 tsp baking powder Splenda to taste I have not tried it yet maybe thats what I will have for breakfast for tomorrow :)

Oh that sucks. I can not eat a lot of fruits so that makes Atkins nice for me :)

Sounds like it would work well! I know what you mean as I am gluten intolerant so I don't even miss bread and all that sort of stuff - makes it easier not craving it! Is there a reason you can't eat fruit?

The acid in some fruits like Oranges and strawberries burn my toung and break my hands out. I can have small amounts if I cook them first. Like with the egg salad with tomato I ate for lunch I mirowave the tomato first so that it only burns my toung a small amount.

I can eat other fruits like apples and figs all day with no reaction.

looks a lot like poison ivy and has the itching like it too. Thats from touching a good amount of it. If I eat to much the rash can also show up on my belly and feet. It started when I was 25. Which the doctor told me was common for your body to gain and loose reactions when you get older. I can now drink milk. I would go back to not being able to drink milk since like you with bread I do not miss it. I am 34 now so I am sure I will have this the rest of my life.
