Biggest struggle? Trying to figure out what I'm going to use instead of rice! I'm a Louisiana girl--jambalaya, gumbo with rice, etc.

Look up "cauliflower rice". It's a great substitute for white rice!

Kata you may enjoy "Quinoa"! It cooks in the same way as rice but a ton of awesome nutrition! Its a seed!!! Google it and check out some recipes! I make it and add some ingredients similar to what you like! Its easy to substitute for rice! This Saturday night I am making homemade sushi and using it in the rolls instead of rice! I have no idea how it will taste but I gotta try it!
