I have to admit that I kinda love cooking without a recipe.

Don't get me wrong, recipes are great but I really love just winging it in the kitchen and seeing what I can make. Tonight's adventure was a really good rice/chicken/veggie combo. Basically, I cut up a chicken breast, browned it in my pressure cooker (It's one of those combo things that browns, steams, etc - most awesome appliance I own.) then set it to steam and threw in rice, sliced zucchini, chopped red pepper, chopped banana pepper and steamed everything for 15 minutes. When it got close to done I threw in the tail end of some cheese to give it a nice texture. Yum, SO good and it turned out to not be a lot of calories for the amount of food. Plus no added fat in cooking since the only kind of oil or anything I used is a little bit of nonfat cooking spray so nothing would stick. Mmmm...

I'm so going to miss real dinner when class starts next week. Oh, sure I'll have dinner at night but for the first month of school I'm going to be crazy busy and there won't be time to putter around in the kitchen as much. I picked up extra granola and fruit bars as well as string cheese so I don't start skipping meals when I go back to school. Sure, I won't starve and I'll probably still eat pretty healthy but there's nothing like cutting up fresh veggies and making dinner.

It seems like a lot of people started class already this week as I've seen from your journals. I start back Sept 1st and we work on a wonky schedule where the first Wednesday after Labor Day actually follows a Monday schedule. (Yeah, I don't get it either.) I'm looking forward to and kind of not looking forward to it at the same time. I mean, I like class, I enjoy school and I look forward to finishing this degree but I'm kind of enjoying being off and just dealing with work right now. Oh well, I'll adjust.

I really need to find or buy some belts. My pants have been falling down all day. These are the pants I bought back before I started this job about a month ago and I swear they fit me then. They've gotten progressively looser each week I wear them but I never worried about them falling down before. By the way, these pants are a 20 from Old Navy - a size bigger than the jeans I just bought. I refuse to buy any more size 18 pants since I have a pretty good wardrobe in that size, I just really hate wearing anything tight. I think it's from a lifetime of squeezing into things that don't fit.

So today's my off day on the 30 Day Challenge and I am doing NOTHING. I went shopping tonight briefly but no major exercise. My body desperately needs the rest, particularly as the EA Active personal trainer girl might be actually trying to kill me, lol.
