Doing pretty well today but I have to say that I am kind of worrying about Easter. Does anyone have advice on what to do to survive Easter dinner still on Atkins?? Any Atkins friendly Easter recipes?

Amanda, because you'll be just barely a month on Induction, I'd try to stay as close as possible to your typical low-carb foods....hard as that may be with 3 kids! You're doing the right thing to begin to think about that dinner NOW and not just a day or two beforehand. Because this is early in your journey, I wouldn't try anything "exotic" like various low-carb recipes you might find on a lot of cooking sites....frankly, I don't trust most of the carb counts and would only use those that I've entered the ingredients myself and verified the counts. If you do an Easter breakfast, then of course, just about any kind of egg dish will work great. For breakfast....or for dinner....you can try out a crustless spinach quiche. The recipe is easy and can be made with some ground turkey or ground turkey sausage added to it to make it a bit heartier. If you need a meat item, you can always go with a turkey or chicken. If chicken's too ordinary, then try Cornish game hens.....or duck. Mashed cauliflower with cheese makes up nicely as a side dish, in addition to a nice salad and/or green beans. Although ham can have added sugar and lots of sodium, if you search hard enough, you might find one without too much, so you can have a small portion for yourself while the family indulges. There may be those that would say to allow yourself a sugar-free jello or a SMALL quantity of sugar-free candy. This can be a very slippery slope, however. It's an individual choice that you should think about well before the day, make a decision, and stick with it. Just be very, very careful that it doesn't lead you to the "real" stuff. If you think there's ANY chance of that, then don't even try any special treats....MUCH better safe, than sorry!!!!

Thanks for the advice. I love the spinach quiche idea, and wasn't even thinking about all the different egg dishes that I could make. I don't think that I want to endulge in any kind of sweets yet because I am one of those kind of people that is all or nothing. Like if I take one bite I will automatically feel defeated and then just eat everything. I want to plan this out ahead and definately stick to my diet on Induction. Thanks again for the great ideas!
