I hope that everyone had a great day yesterday celebrating the nations independence. I just wanted to share some of the Amazing items I got to enjoy - 1st is a brisket after 15 hours on the smoker, fresh corn on the cob and we made a mock potato salad that used cauliflower. All portioned and kept to my WOE and it was just delightful to know that being a bit flexible, paying attention to what was on the plate and a few adjustments allowed me to really relax and enjoy the meal. Talk about freedom - on and when I did my checks...BGL stayed right in the range I am happy under 100; 2 hours post meal...oh and that included a slice of my wife's carrot cake (all adjusted to reduce the carbs). I am really grateful that you have all helped me learn and grow on this journey. I hope you all have a great time learning on this adventure. Happy 4th to you all.
