I just want to say a big THANK YOU!!!! to everyone who gave me support and encouragement yesterday. I was really down, I had fought pain and lack of sleep for 4 days while taking care of things at work, and my family at home. I was at the end of my rope so to speak with making healthy choices. But some how everything worked out yesterday!

Yall will be happy to know I did NOT have pizza last night. I ordered pizza for the whole household, but didn't even have a smidge or a sniff of it. I guess the universe, karma, whatever was looking out for me.

I had called in an order to have meat and cheese sliced at Publix when I went to my doctor appointment, it was right across the street from publix, so I was just going to swing in pick it up and go back to work. But. Big But!! I had left my wallet at home and only had my checkbook, usually they ID you for a check, so I needed that with me.

So later in the day I ordered pizza for everyone, then I left to go pick up the meat and cheese at publix, I was gone about an hour since I did other shopping while I was there. I ate about 3oz of meat and 3 slices of cheese on the way back to the house. Then I had a cup of really good blackberries when I got back. ^_^ Everyone had eaten by the time I got home, I wasn't hungry so the pizza had no power over me. (This was my Labyrinth moment, minus the flowy white shirt and with pizza portraying David Bowie's Goblin King) So it all worked out in the end.

I feel much more like myself today. Hopeful, happy, productive. There has been a huge reduction in the level of my back pain. The constant throb/hurt is gone. I'm still a little stiff today, and a bit sore, but I can deal with that. ^_^ I'm retaining fluid though.

I thought maybe I should address my goals with eatting habits. I'm doing a low fat diet. I do not have a gallbladder, and have issues if I don't consume some type of bread/rice on the regular. O.O If I skip all bread/grains then I'll basically induce a colon cleanse. lol If I skip a meal, same results. If I don't have a snack, same results. I didn't have grain last night for dinner, so I may have some issues around mid morning today. Ugh.

The idea of using egg as a crust is a great one, but unfortunately I no longer eat eggs. Scrambled, fried, boiled, etc. It triggers a gag reflex and I have tired to get over it, but I just can't. :/ I had a bad experience cooking fresh from the coop eggs when I was 9yrs old, and haven't eaten them since. I still remember loving the taste of them as a kid, but at the same time my guts give a wibble wobble and a hard NO to eating them now. lol. Breakfast on the go is rough for me, but with frozen turkey sausage, some potatoes, a little cheese all pre-proportioned into bowls, I make it work some weeks. :)

So tonight's plan is homemade chicken soup (one of my favorite go to recipes) featuring slow cooked chicken breast from earilier in the week, matchstick carrots, onion, garlic, celery, and a variety of spices. It'll be served hot over jasmine rice. I may make some homemade hoecake, which is like a fluffy buttermilk biscuit bread cooked in a cast iron skillet in the oven. Two family recipes, one from my mom's side, and one from my dads. :) Together they are excellent.

For lunch I'm going to toast some lower calorie flatbread in my oven, then top it with a little marinara, london broil, and cheese. And have a side salad with some tomatoes, and the thai inspired dressing that I make with ginger, soy, siracha(sp?), basil, and some roasted red pepper dressing as my base.

No real plans for exercising today, mostly focusing on being mindful of not over exerting the muscles in my back. Not an easy feat with a 1yr old baby to care for, but we'll make the best of it. She has a doctor appointment this afternoon, it's her 1yr check up. :) Pic below from last night, couldn't help it. lol.
