Try it instead of apple sauce with pork if you eat it. Nice and tangy if you stew it without sugar. It goes well with mackerel too

Or rhubarb vodka - I’m sure you’ll find recipes if you Google. I found one for rhubarb Bellini and tried to erase the thought 🤪 🥤

Ooh never though of having it with meat, I’ll skip the alcohol though. Not that I drink vast amounts but not touched a drop in just over two weeks - having a bit of a detox 😀

My easy one is to stew it with ginger and the juice & zest of an orange. No need to add water. Then mix in Chia seeds to make a tangy chia pudding to serve with yoghurt. If you need it sweeter, use sparing amounts of sugar substitute unless you're not avoiding carbs at all. I think it would go well with Duck as well as mackerel and pork. Lots of things to try before it's out of season again.

Stew it a little in a pan and then add a spoon full to a ramekin and top up with a solution of sugar free jelly. Hey presto..... Lots of little homemade rhubarb jellies 👍💪😊

I think you can bake it... I'm not sure exactly how, but my mum used to bake it and we'd have it with ricotta and prosciutto.
