I ate 3 bowls of ice cream last night and lost 2 pounds. My metabolism is so much better than it used to be.

Day to day fluctuations are no way to tell if you're on track or not or whether your metabolism is working well. It takes 1.5 days to digest food. Any daily fluctuations come down to water weight. Anyway, if you were in a calorie deficit it does not matter if you ate ice cream or not.
