Hey Sarah. I'm so delighted and tickled about what you said about the BLE. I, too, at 51 finally "Get It" and it's been so freeing. You probably get what I'm saying here. I'm currently knee deep in reading, "The Pleasure Trap" by Douglas Lisle. Great book. I highly recommend it. My husband and I are experimenting with new foods for lunch/dinner too that meet the BLE rules AND also limited oil and salt. I made up a great corn chowder the other night and that's a big hit, a lentil chili and recently a tempeh/spinach/mushroom/spaghetti sauce over spaghetti squash "noodles" to keep on hand. We also do a lot of baked tofu strips to throw on salads and large pans of roasted veggies to add as sides or put on salads. Let me know if you find anything good out there.
