My poor diabetic husband would probably kill for this breakfast. Oh well 😔. Such is life. What kind of diet is this? It's looks very rewarding for sure. I'm sure you smiled the whole time you were eating it 😃.

Paula: This would be a great diabetic breakfast - I think better than grains - ultra low in carbs to keep blood sugar normalized. Probably reduce portion size a bit and maybe eliminate the corn. These coconut waffles are like 3-6 net carbs per serving and are very light and berries are the lowest carb fruit. I would eat this in a heartbeat

Thanks Perks54. So you made the waffle with coconut flour? Never heard of it? Would you send me the recipe and where I can get this? You're right...no corn and good to go. Only one waffle. The frittata is very nice looking. The plate just was such a nice presentation.
