Today's lunch; lentil soup (+nutritional yeast), cooked carrots, fresh salad - romaine lettuce, Roma tomatoes, sliced celery, onions, topped with grilled portabella pieces and green onion. :D

Hi guy's, I am so pleased with the overwhelming response to yesterday's lunch - a complete plant-based meal with only 300 cal.. Feel free to check out my food journal for portion size which makes all the difference in my journey. For those interested this meal yield 45 net carbs, 11g fiber, 0g cholesterol, 679mg sodium and 935mg potassium. I hope this helps someone out there in this community.
