I am getting into the rhythm of bacon and eggs for breakfast now. For quite some time now, I ate what I thought was a healthy breakfast of homemade muesli, with yogurt and fresh fruit, or some oatmeal with fruit, nuts and low fat milk. It was a bit of a shock to shift as dramatically as I have, but the proof is everywhere that this is healthier for me.

The numbers on the scale are moving finally. My blood tests are looking dramatically better. I am not hungry. And I am eating about the same amount of calories I was eating before.

I have to say, my shift has so much to do with Gary Taubes and his extensive research into nutrition, and the dogma we have been fed for the last 40 or 50 years, that was based on faulty premises. Yes, Atkins had been saying this all along. But, like many I was wary of this type of diet. With a strong history of heart disease in my family, it seemed way too risky. Now, I know that the risk lies with the carbs, not the fats.

I started the Atkins plan with the intention of a 30 day trial. May 31st was day one. I am sold. This is the way I will eat for the rest of my life. I truly respect the way the diet is designed to be customized to each individual's biochemistry. One size does not fit all, and he recognized that.

I was like you and bought into the Conventional Wisdom until I read Gary Taubes. Also, good job on incorporating Coconut oil into your diet! If you're still interested in delving deeper into the nutritional rabbit hole I'd highly suggest reading Deep Nutrition by Dr. Cate (drcate.com). It isn't just the refined carbs that lead to heart disease and other problems but it is a one-two punch from refined carbs and refined vegetable oils (corn, soy bean, canola, safflower, etc.). Refined flour and refined vegetable oil are the staples of packaged & processed foods. Good luck in your journey!

thanks mike! I will definitely check out that information. I have been trying to sort out the information around vegetable oils, and have not found too much information that is clear, or that seems solid....so I appreciate the tip. I have heard enough about the benefits of coconut oil to make that transition.
