Freaking AMAZING salad!!!

Got the recipe from nomnompaleo.com
So easy. Need a peach, proscuitto, greens like arugula that are a bit bitter, olive oil, and balsamic vinegar.

Cut the peach in half. Pit it. Then cut the halves into thirds. Wrap each peach piece in a slice of proscuitto. (Mine were wide strips, so I cut them in half lengthwise first). Heat up a skillet over medium high heat. Lay the peaches in the pan on their side. Leave for about a minute. Turn to the other side. Sear that side for about a minute. Then turn on the back (skin side) and sear it.

Place the peaches on top of the greens. Drizzle with balsamic and olive. Prepare to have your mind blown!

DH was out tonight, so this was dinner, along with some macadamia nuts, and broth. Awesome. Oh, and strawberries. Just what I needed.

My stomach bug is mostly resolved....finally!! Busy working to get the house finished so it is ready to list and show. Our washing machine died about 2 weeks ago. They were about 15 years old, so it was time. Got new washer and dryer delivered on Monday. Old dryer had a vent out the bottom through the floor. New dryer vents out the back. Have to have someone come to re-route the vent through the wall, and reconnect to the floor vent. And the washer has something wrong with the temperature sensor. Only runs hot or warm.
The garage ceiling has calcimine on it. When you try to paint it, especially with a roller, it just peels the existing layer right off. We have scraped, primed with an oil primer, and then when we tried to put the latex ceiling paint on, it just peeled everything off. The fun just never ends. Have called a handyman to see if he can handle these. Just don't have the energy or motivation to deal with these things anymore. Want to be out of this house!!
Sticking to a protein shake for breakfast, and protein and veggies for lunch and dinner. Seems to be working for my stomach, and dropping a few pounds as well.
