So, somehow in all my endless dorky research I confused the nuts a being a good fiber and protein. Well just ate 1 serving of cashews with my eggs as breakfast. Live and learn I guess!

Could you eat almonds instead, unblanched ones?? They're a lot lower in carbs and would have more fibre. I love them with cheese :)
