Thanks All! I didn't follow the recipe to a T. It wanted brown sugar, salt, vanilla, walnuts, butter and sour cream...I found it on Allrecipes.com. I just used 4 tbsp of Country Crock, and 2 tbsp of light sour cream. I microwaved 2 sweet potatoes on my "potato setting". Probably 10 mins. Thru them in the oven for about 20 mins. Let them cool for another 20 mins (I went for a walk ;-) ) Used my wisk until the pulp was smooth and put it bake in the potato. Baked for about 10-15 mins. The oven was at 400 degrees. We were having cornish hens with it. Enjoy!
