Carbs in squash and onions pisses me off! DAILY! If you look at my food diary you'll see that my normal lunch has squash in it, I accept that there are some carbs in it, and deal with it at dinner time and cut way back on carbs then.

Love summer squash as zoodles with sauces and meats. They are not too bad in carbs when they are part of a meal...

A cup of summer squash has about 3 net carbs which isn't much. Instead of recording it as '1 large' I would weigh/measure it....

Fruits have carbs in them. Full of sugars. Despite what you cook book says, a squash is a fruit. Even low carb diets recommend eating fruits. They contain more than just carbs. The carbs you have to avoid are the ones in added sugar or in starches. Those have no value other than as carbs and provide no benefits. @Crankybuzzard, try using garlic, green chives, peppers, or celery instead of onion. You'll find you only need a little of them to flavour your food. Or try cooking your food on a bed of onions, for flavour, but then discard most of the onions rather than eating them.

I like yellow squash too and don't worry so much about the carbs in them.

i would never dream of throwing away onions, i include them in my carb count like any other vegetable. i am not a big celery fan but love garlic.

I increase the fiber by adding other things into the mix that are very high in fiber. Then I don't feel quite so bad.🤷🏻‍♀️And onions have other health benefits besides just flavoring. They are one of the reasons chicken soup was always considered so healthy.🙋🏻

Carbs are very important if you are trying to lose weight - because if you eat excess to your bodys requirements it is turned into storage fat - Dieters should try to not eat more than 20g of carbs per day to lose weight = Thin of carbs as Sugar
