So EASY! Frozen spinach measured into a small 1 cup microwave cup and nuked for 1 min, toast is easy peasy. I just put chopped roasted peppers and some onion into pan until lightly cooked before I added the eggs (1 egg and 1/3 cups whites or 2 egg whites) and cilantro for flavor.
