Baked another half batch of soul bread last night and I'm pleased to say it turned out better than the first one. This time I spooned the batter into a brownie pan (2" x 2") so I had a more reliable single portion size. My husband even enjoyed one with soup this afternoon. It's a win-win all the way around.
This evening I cut a couple of them in half, grilled the cut side with a little butter and topped with bacon, havarti cheese and a little caramelized onion. Holy shihtzu that was amazing!

Do you use the xanthan gum? If yes, where did you get it? Thanks!

I found the xanthan gum in the baking aisle of a more upscale grocery store. Chances are if they sell gluten-free flours, they'll likely stock it. It's not hard to make, but it is finicky so you'll have to follow the recipe pretty tight.
