It might look like eggs, but that's actually a tofu scramble to start my day. Happy Wednesday, everyone!

You're right you had me completely fooled if you had asked me if that was eggs I would have said "yes of course those are scrambled eggs." Hope you enjoyed your meal 😊.

Leah - I used a tofu scramble mix recipe from one of Sam Turnbull's cookbooks. It uses black salt, nutritional yeast, and turmeric and a couple of other things to give it the color and flavor of eggs. Quite tasty, all in all!

I haven't yet got around to trying a tofu scramble. I enjoy tofu but I've always used another dishes before I've gotten around to trying to cook it with it this way. And lately it seems like I've been very fatigued and not cooking as much as I usually do it's just truly a pity because I enjoy cooking a lot. I think I need to be more honest with my doctor instead of that appointment I talked with him the other day and he admitted that he would go ahead and set me up an early appointment so that since I would not go to the emergency room. I'm very much against using the emergency room as medical Care unless you have an actual emergency I don't like using a medical card in this way I feel that it's abusing our medical assistant and it puts unnecessary stress our emergency care workers. I have many friends that work in the ER and I think this is unnecessary and I don't feel that you can just command them to do a Mr scan at will without it being issued after talking with one of my friends who works in the ER she also said that this is the case. I believe that after this evening probably tomorrow I will go ahead and set up that appointment. it's becoming more obvious with time that my new medication is not functioning up to what it should be and that this fatigue is not going to suddenly resolve itself like I had hoped before. Unfortunately my doctor's theories about the new medication were wrong and that's okay we all make mistakes this medication is $50,000 cheaper a year and what that would be very nice but it's not functioning so it's not effective. And I would like to go back to enjoying things in my life. The new job will help a lot but it's not a magic cure all and we want to slow down or stop progression and since secondary progressive MS is not a kind disease we need to be very proactive. I've let myself become LAX and that's not acceptable. I'll look up the recipe I've never tried to scramble with tofu but I do enjoy breakfast foods and I do enjoy tofu. If you had told me as a younger person that I would enjoy tofu I would have looked at you like you had grown two heads and four eyes. Isn't it funny how we change as we age.

Black salt has a slight taste of sulfur to it. It's often used in vegan cooking to mimic the taste of eggs

Oh 😮 how fancy I had no idea about how salt could be used to mimic certain foods like that how smart. I've heard of the nurtrisual yeast thing being used to add savory elements or even cheesey flavor

Looks tasty! I’m an old follower, of yours, different name. Going vegan is on my bucket list. Going vegetarian is on my list of goals for the next few years, maximum. I already eat more plant-based than I used to, by far!!! I used to eat so much meat that a veggie meal left me feeling deprived, even if it was tasty, up until a few months ago, again after being able to handle eating mostly plant-based in 2021. Doing a little better now with plant foods—not ideally healthy, but healthier than if I ate as much meat as I used to, lol! Working on that too.

Welcome back, Laine! I stopped at pescaterian for quite a while, but finally decided to go for it. My heart's been calling me to do that for a while. I have to make sure I eat a balanced, healthy diet to stay satisfied on completely plant-based, which takes a little more planning and effort, but it gets easier and easier. Honestly, meat wasn't that hard to give up (I was, frankly, always a little grossed out by it), but dairy was a tough one. I do have some good vegan "cheez" recipes that make it up, and I try to make sure I get enough soy, seitan, and beans to ensure adequate protein.

Good job. I can tell you do well with exercise too, all that skiing. You’re brave to put up with cold. Here I am complaining whenever it’s below 65 degrees…I used to go out even when it was below 10, on long walks, but still didn’t ski, and started hibernating lol again…spoiled myself a few years later, which is silly in a slightly cold climate that I should be used to (again lol), nothing like the Arctic though. XD

I'm actually a bit of a slug on the exercise when I'm not hiking or skiing. Love activity, hate exercise 😂
