Avocado 🥑 bread…This batch has 1 avocado (113g), 1c mozzarella-provolone (I did 75g), 14g parm, 1 egg, 1/2 tsp xanthan gum, and 1/4 tsp garlic powder. Baked @350 for 40 min. Letting it cool right now. 279 calories ea.

@liv001…today, I put OM Carving Board Roasted Turkey meat with homemade honey 🍯 mustard 💛 sauce and folded it like a taco 🌮 shape. I may cook the “bread” a tad bit more next time to make it a bit dryer and crunchier. I NEED to get an air fryer!

ohh interesting. how does it taste? I've made the avocado cookies, and they are great. I waited a while before getting an airfryer. I got a cheap one on sale, and they are a game changer for me. I cook most of my meat in it. the air does throw any type of bread around, so it's best to heat up with something on it.

So is it a heavy bread with a tight crumb? or does it have a more loose crumb like a ciabatta bread do you think? I couldn't really tell from your photo I've never tried avocado cookies or bread but I love avocados I've never cooked with xanthian gum before but I could branch out...what's it's purpose in the cooking process? Is it kinda like cream of tartar?

@Leah…xanthan gum is used as a binder/thickener. I use it when I make the Keto Twins chaffles. It helps it be more crunchy, too. The Keto Twins chaffle is the best IMO because I like the crunchiness of it. I learned about xanthan gum from the Keto Twins. Yes, this time, I folded the avocado bread like a taco 🌮 shape with lunch meat & honey mustard. I definitely could have just made a sandwich 🥪 like normal. This avocado 🥑 bread was ok, but I prefer the taste of the keto twins chaffles! Lol. It was not crumbly at all and it held up REALLY GOOD holding the lunch meat! The best part is it was extremely filling and absolutely low carb (so it did not spike my blood sugar) since I’m type 2 diabetic.

SORRY for the late response. The avocado chocolate cookies are: Extreme Fudge Avocado cookies by Keto Connect on YouTube or their website.. is my recipe. They are great. I use more sweetener than they do. Sometimes I add the chips but they can be left out. Don't over cook and they will remain fudgy!
