The craziest thing has happened, but at such an imperceptible speed I couldn't tell you exactly when it happened. I actually CRAVE veggies now. I get excited about having brussel sprouts for dinner. I had the most amazing roasted squash last night, and today's cabbage was comfort food at it's best! And kale! Yesterday I made the best kale with a bit of bacon for the fat. Everything tastes great when you can use a little bacon or butter to cook with. :-)

I think, if you have been eating too many sweets, and too much gluten for too many years, it takes a while for your body to adjust to this new (much healthier!) norm. I still enjoy something sweet from time to time, but usually it is a bit of a letdown. Nothing seems to taste as good as I think it might, so I seldom eat much of it. But, I am happy to pile the veggies on my plate. I can't tell you when this became the new normal for me, but I like it!

Most people think of a paleo diet as being meat centric. But the longer I spend eating a paleo-like diet the more I have come to see how much it is about eating food that is well sourced and loaded with nutrition. Industrial food won't do. It never, ever tastes as good or make me feel so great. A wide, colorful array of veggies is central to this way of eating. And yes, there is meat, and wonderful, healing, satisfying fats. But the veggies should get more press. They are how I think about what is in season...and keep my food budget in line! I have not been wanting a salad for the last two months. There are so many other things that are more seasonal, and appealing in these cold months. But in a few months, as the weather warms again, I am sure I will be looking at those greens and getting excited about making salads again.

Bacon and Butter seems to be the problem for some of us!!! Your right; fresh ingredients prepared simply during the time when they are best and consumed in balance and moderation is the key to good nutrition and being happy about it. Super Walmart, though convenient, goes against what should be our natural diet with asparagus from Peru, strawberries from Honduras, beef from Mexico and shrimp Indonesia all at the same time.

yduj57 I believe you are in the zone now, girl! I agree with you. Once you begin to get better sourced food, everything seems to change and the veggies that took a backseat, become the driver now. Your dinner plate last night sound beautiful and delicious. I love cooking my greens in bacon grease, too.

Veggies are amazing!! If you have ethnic stores or farmers markets (warm weather of course) avail try exploring those for expanding your veggie choices. Most American supermarkets are actually pretty limited in whole food options. I have to tell myself to only buy one new type at a time or I can go overboard with veggies and buy more than I can possibly eat. I can hardly eat sweets anymore. Something will look amazing but instead f tasting good after a few bites it gets sickening.

This is so fascinating listening to you guys talking about your reactions to eating whole foods opposed to how you used to eat. I guess that is true of anyone that switches to whole foods and makes their own meals.

I have to chime in Yduj - this as been my experience also. I can actually taste the veggies and meat now. In my previous sweet laden woe, I have to confess I did not truly taste a lot of the foods I ate - must be because of my sugar coated tongue. In my previous WOE, the sweeter the better. Now I enjoy the true taste of food. My palate can appreciate kale, cabbage, squash, Brussel sprouts, etc. I don't have the sugar crash anymore because I don't consume sugar. It's great to rediscover the way we are supposed to eat and to learn how good it is for our bodies! It's great to rediscover the kitchen too.

..... and for some of us, it's great to discover the kitchen for the first time. I bet some people didn't even know they had a kitchen in their houses. LOL!! My biggest thing now is to eat slower and savor each bite. In one of my jobs early in my working days, I learned to shovel food down or it would get cold because I had to leave it and wait on a customer. That habit never left me. I need to figure out how to be more mindful.

This is encouraging news to me. I look forward to being where you're at in regard to looking forward to vegetables. Mind you, I've had nothing against them all along but never ate enough of them and did eat far too much sugar and carb-laden foods. I'm just starting out a total redo of my lifestyle. I know it's going to be a slow process as there are just too many bad habits to change at once.

Love all your feedback! Glad to hear how you are all finding your way on this path, or heading in a similar direction. Mom2Boxer, my daughter eats so fast it makes my head spin. And then she feels awful afterwards! You would think that would make her slow down, but not yet. She will learn, eventually. Hang in there PhotogGal, and forgive your transgressions, because they will happen! Just get back on the path, and your body will adapt to this way of eating, and I swear, you will crave vegetables!

Wow Yduj- I'm looking forward to feeling that way! I am addicted to sugar, which it calls my name all of the time. I heard it takes 30 days to break a habit!

I'm sitting here eating raw cauliflower, romaine lettuce, avocado, toasted sunflower seeds, with an olive oil mayo dressing for dinner. It's perfect tonight. May have a pear or an apple for dessert and a piece of whole grain homemade toast.

Bwahahaha - I just pan sauteed Walleye (fish) with red bell peppers, onion and fresh garlic - I said to my husband, "Oh my gosh this is great...of course I used two pats of buttter!"

Yum!!! Haven't had walleye in years.... not available here, not old enough. A bit of butter good for you, natural product. I use it not margarine any more.

I really miss Walleye. That was my favorite fish when I lived in the Midwest. Here in South Carolina, you just don't see it anywhere.

HCB, that sounds delicious! And the butter helps bring out the flavors, and keep you satisfied. Glad you are enjoying it! It is the most sustainable way of eating I have ever experienced.

We don't get Walleye here either. More of a freshwater fish than saltwater. Too close to the coast, so the ocean rules for fish sourcing.

The same thing happened to me going on five years now. One day all at once I couldn't get enough veggies. Spinach, yellow summer squash, peppers, and onions is my favorite although I love all vegetables now. I eat them for breakfast as well.
