It’s just like plain rice but it has some extra micronutrients and a pretty color! For mine: I do 1.5 cups of white, 2 tbsp of black rice, & 3 cups of water. Add everything to a microwave save container or rice cooker, stir, and cook normally. For the microwave method, I cook for about 17-20 minutes until the rice is mostly dry at the top. You should be able to get the black rice at your local international market if they have a good selection of Korean products.

Basically the black rice has the antioxidant pigment called anthocyanin in it (also found in cherries and other purple fruits and vegetables) which turns the white rice purple!

Thanks for sharing. A co-worker brings purple rice for lunch, but won't tell us how it's done. Now I know and can make it myself.

Probably about 670-ish because I had a lot a guacamole and 1.5 cups of cooked rice! I burned almost 3000 calories on Saturday and was under 1500 for my in calories so, my body needed some extra fuel for today. I typically try to stay around 500-1000 calories for my daily deficit.
