Moo P. Chicken vegetable soup
(These are all estimates, I made it without a recipe)
1-2 tbs olive oil
1/2 red onion diced
3 Celery Ribs sliced
1/2 bag of baby carrots
4 chicken thighs
1 can of diced tomatoes
2 tbs mushroom powder
1 cup white wine
2.5 quarts water
1 tbs fish sauce or anchovy paste
Salt and pepper to taste
Cilantro (garnish)
Kimchi (optional)
Heat oil in a 1 gallon pot
Add onion, celery, carrots. Sauté until it’s fragrant, a few minutes
Add chicken, cook until skin has a little color and the meat isn’t pink on the outside.
Add the rest of the ingredients, except for the salt and pepper. Bring to a boil, then simmer for 30 min until chicken is cooked. Shred the chicken, season with salt and pepper.
After I ladled it into bowls, I added a little bit of kimchi on top for some spice and garnished with cilantro.
