Made this knock off Olive Garden Tuscan sausage and kale soup on a very snowy night but used sweet potatoes instead of white potatoes as I’m trying to avoid white refined carbs! It hit the spot! 😋

@RachellleR, white and sweet potatoes are both "whole foods" (i.e. in their natural state). Comparing the difference in primarily nutrients and (secondarily) aesthetics should be the basis on which you choose between equal portions of the two. The other consideration is the condiments you might choose. And, of course, what you put on them makes some difference (like gravy on white potatoes v. brown sugar on sweet potatoes).

Thanks Miraculum for the info and liv001 for the support! I mainly chose sweet potaoes to add to the soup because I read that Sweet potatoes have more fiber and are slightly lower on the glycemic index than white potatoes. Even though the same amount of white potatoes and sweet potatoes contain about the same amount of carbohydrates. I love potatoes and they can be tricky for me to stop once I start eating them so in my quest for not eating added sugars and not eating white flour or white potatoes this was my trade off!I have still been having some white rice noodles in my Vietnamese pho and will have to decide down the road if that working!

I love soup and am making a big pot of veg. soup now. I too chose to put 3 small yams into it. Although high in carbs I put a small can of kidney beans because it is such a big pot with lots of short ribs, onions, celery, canned tomatoes, fresh mushrooms, carrots, and will add fresh zucchini, maybe that eggplant in the refrigerator, and frozen peas.
