Today is a higher than normal carb day. All my organic avocados, which are from my neighbors tree, are fully ripe! So, I made guacamole and cheese chips.
When an avocado is picked it is rock hard. They do not ripen on the tree. So, you just let them set inside for a few days and then voila. These are the best because they are tiny and you don't have to cut them in half and keep the other half for later. Next time I won't pick as many. It took 8 of these tiny darlings to make 1 cup of guacamole. I'm so lucky to have a sharing neighbor!
