Made it through a super challenging day yesterday. Woke up to lights in bedroom and bathroom not working, and rest of the house lights were dimming way low. Cell phone charger was saying it was charging but never did increase the charge. Started to scramble my morning eggs and the burners on the stove would only barely heat. SO, knew something was wrong with electric and phoned the after hours Electric Co. After describing, they came immediately out and found out one of the plug/connections on our meter box had burned! It was literally melting the rubber off of the copper wires. They deemed it unsafe and shut our power off at the pole. Which meant I could NOT COOK anything!! LOL. Crazy that was the first thing that popped into my mind. Throughout calling electricians and all the craziness that ensued with that the entire morning, there was nothing in the house that I could really eat and stay on LCHF without cooking it first, except a few cold veggies. And since I had no heat until they fixed it I was not motivated to eat a cold veggie with it being 53 degrees inside the house. So, unintended fasting until 2:45 pm when finally everything was fixed and power back on...Haha. Boy though, I was NOT ABOUT to give in on the diet! I sure was stressed out though, especially not being able to 'eat away' the stress. Hubby took us out to eat Mexican and the waiter thought we were nuts for asking him to leave the salsa on the table but take the chip basket away. Challenging, but successful day.

Wow, that was a definite test of willpower! So how do you eat the salsa without the chips? With a spoon?

Thanks everyone! Swimming - Haha! - you spoon it onto the chicken fajitas :-). Seriously though I could probably drink the stuff. The restaurant version is SO much better than store bought. And the likely horrible thing I did was eat my planned breakfast AND lunch back to back at 3:00 pm because I was so hungry. I'm sure that wasn't good but it was better than the old alternative would have been.

Oh I thought the salsa was a starter that came with chips LOL! You did great sticking with your planned meals. If I get too hungry I just eat the whole kitchen!
