Salmon Patties

Directions

  1. Flake salmon with a fork in a small bowl. Lightly scramble egg and mix into salmon. Mix flour and chia into the salmon mixture.
  2. Heat 2T oil in a skillet. Scoop out about a tablespoon of mixture into a lump and drop into the hot oil. Slightly flatten with the back of the spatula.
  3. Cook 2-3 minutes per side and remove to a paper towel to "rest" for a couple of minutes. Divide the patties into two servings.
