Low fat chunky fried potatoes make for the perfect comfort side dish.
Ingredients
Directions
- Wash and slice potatoes into 1/4" slices.
- Spray non-stick skillet with cooking spray like Pam, and pre-heat briefly. Do not allow to brown or smoke, just a few seconds.
- Place potatoes and onion in pan, add salt and pepper, spray top lightly with cooking spray and cover with lid.
- Cook on medium to medium-low heat until browned and turn potatoes.
- Cook 5 minutes longer to brown slightly then add water, replace lid and continue to cook until potatoes are tender and water is evaporated.
- Spray with buttery spray and serve.
- Note: green peppers are also good with this recipe.
