A super tasty chicken capri dish that's great for everyone.
Ingredients
Directions
- In a blender or food processor, combine the ricotta with the oregano, salt, and pepper. Process to blend.
- Rub the chicken with the garlic powder. Heat the oil in a large skillet over medium-high heat. Add the chicken and cook for 12 minutes per side.
- Place the chicken breasts, side by side, in a large baking dish and allow to cool.
- Preheat the oven to 350° F (180° C).
- Spoon 1/4 cup of the cheese mixture and 1/4 cup tomatoes onto each chicken breast. Top each chicken breast with 1 slice mozzarella.
- Bake for 20 minutes, or until a thermometer inserted in the thickest portion of a breast registers 170° F (75° C) and the juices run clear.

Loved this! We tire of chicken. I used tomato sauce instead of tomatoes and served it with "zucchini pasta."

I used homemade marinara instead of the tomatoes. It got rave reviews from my entire family.

I loved this, my family loved this; I will definitely be making this again. It was so simple, and tasted just as good as some of the dishes you get when you go out.

Tried this tonight. Very nice dish, but I think next time I will leave out the ricotta. I think it will be just fine without it. I also used shredded mozzarella instead of sliced. Melted quite nicely.

I love this dish. really awesome with fresh basil in the ricotta too. Make double, you are gonna want leftovers.

I made this along with zucchini "noodles" for a cooking class at my Senior Center and it was a HUGE hit. The entire class said this was like a $20 restaurant meal and they couldn't believe how simple it was. Instead of dicing my own tomatoes I used canned diced tomatoes that were garlic and basil flavored.

Excellent recipe. A bit bland, but I don't think I added enough garlic powder. So that's my ouw fault. I'll add more next time!
