Looking forward to trying this recipe. I will probably leave out the extra salt, and use low sodium broth. To help with my low sodium diet I am on.

This is absolutely delicious. I used red cabbage which made my broth quite sweet and I added chili peppers to make it sweet and spicy. I didn't find it too salty but I didn't add the extra salt, I knew the broth would make it salty. I'm also not following a low carb diet so next time I'm going to add parsnips.
It is filling, low cal and it makes a TON. I'm going to freeze half of it for sure. So, so tasty.

What could I use instead of carrots? Sounds really good but I would like to maybe lower the carbs a little.
