Snack #1: Flatbread with peppercorns. Since the only spice I have access to is the noble peppercorn, what do you think that's going to do to me? Will I be sick of it at the end of the week, or will I love it more? Frankly, in the two meals I've had I've been so grateful it's there to give flavor that I think I'm going to love it more. Another interesting side note is that I definitely practiced some mindfulness techniques while eating this since there was far less than my usual snacking amount, I wanted to savor it....which is interesting because it wasn't very good, haha. Meal 1: mujadara made from rice, lentils, and black pepper. It's edible, but I'm so glad I have the pepper to give it some flavor. It really needs salt, and certainly some form of vegetables like carrots or tomatoes. I think I'm really going to be craving veggies when this week is all done! (Of course you can sponsor me to give me such options at https://my.rationchallengeusa.org/cliffnhansen ) Also, notice the portion size...that's going to take a lot to get used to, but will be a good thing. Might use a smaller plate to make me notice how much of the plate is full of food versus how much is lacking.
