Hi! I am Debi. I am almost 52 years old (come Friday!). I am a sorta' recent widowed wife. Wasn't sure what I was when Dave died? Not a wife. Our kids were grown. Not exactly thay stay at home Mom anymore. So what?
Well, I did figure it out. I am ME, and I am OK...and I am a diabetic..insulin resistant, at that. And that is how I became a "GID" (GI Dieter).A doctor friend suggested it. I lost appx. 60 pounds in about 6 months.Plus I joined a gym...had lots of time on my hands and I really enjoyed the people at the gym.I felt like I was on top of the world!The diet was really EASY to follow.And my blood sugar numbers plumetted!! :)
Then life set in. I really messed up my knee. Had surgery and now i am reatarting the walking, gym and getting more serious with the food part.
I just need hlp with breakfast. I am returning to work, so I need to keep it simple.
OH! Yeah! I am getting married in the spring.God has blessed me twice! My Sweetie says he likes a woman "with a little meat on her bones" but,I want "less meat on my bones!" Plus he said he would love me any weigh about it!
So here goes!!!

Mashed Potatoes !
Smile I love mashed potatoes! And every now and then I MUST have them. But since they play havick on my blood sugar levels...I uaually substane from them.
Then I over heard a couple of ladies talking at Golden Coral. They too loved mashed potatoes, but hesitated eating them. But one lady said she got a portion of the steamed califlower(and mashed it to pieces!) and an equal portion of the mashed potatoes (from the hot bar) and combined the two. The califlower took on the taste of the potatoes! So now only half as "bad" for you. Just eat a normal portion..or add more califlower.
So i tried this at home too. I boiled my pots ,just until tender. Cooked the califlower until soft. Removed some of the "strings" when mashing it. And mixed the two. A little pepper, salt- free Dash, and some ButterBuds..and "Umm, Ummm, GOOD!
I also freeze servings in a "nonstick spray"ed muffin tin (cover with foil or zip bag to prevent flavor mix-ups)for instant meal servings. Just microwave a few mins and mix well and you have comfort food made easy!You can even add a "ice cube" of gravy!Fat free of course!
