Well, I've switched to eating LOTS more veggies and Fruits. I always hear people say "Oh eating healthy costs SO MUCH!" well actually I could buy a couple cucumbers and apricots for cheaper than a bag of chips. Just cut up a cucumber into spears with some salt and peper, fulfills my craving for something salty and crunchy... or cut it normally (like for salads) and add them to a bowl with some vinegar and a bit of salt, its like a healthy salt and vinegar chip! But I'm saving money and getting healthier. I Love it.

I also am trying to find meals that I can make easily in small quantities because I'm the only one switching to vegetarian, and my boyfriend LOVES meat. So I tried this one night when he was having a steak and steamed corn..

Crunchy Sweat Corn Salsa Tacos:

1 Ear of Fresh Sweet Corn (uncooked)
1 tomato
1 or half an avocado (depends on how much you want)
Cumin

Hold the Corn vertically in the bowl and cut the corn off the cob, then chop up your tomato into nice hearty chunks add it to the bowl, take your Avocado and your knife put the knife into the top of the avocado then drag it all the way around to the bottom, then back to the top around the other side. Twist the avocado and pull it apart take a spoon and take the pit out. Take the spoon and then slowly move it around the area right in front of the skin, do this all around the avocado. The skin then should be easy to just peel right off. Do this for the other avocado. Then chop up into same sized pieces you made the tomatoes in. Add them to the bowl. Take your cumin and just sprinkle it over the top of the veggies, then stir well. Now its ready to eat! Add to soft or hard taco shells for a meal, or eat with tortilla chips :] easy quick meal/snack that's good for you!
