Went to my mother's last night and made her a spaghetti squash casserole. She had never had spaghetti squash before and she like it. I had found this recipe but it was originally made with pasta. I just substituted the spaghetti squash. Right now it is really the only thing I really like with spaghetti squash, and I think it is because there is cream cheese mixed into it which takes away some of the sweetness of the squash. It is really easy to make....just brown some hamburg and add some appropriate spaghetti sauce (I use Rao's). Add to cooked spaghetti squash, 8 oz cream cheese, some italian seasoning, garlic powder and salt to taste. You then just put a layer of the hamburg mixture, put spaghetti squash mixture on top of that, and finish with a layer of the rest of the hamburg mixture. Put back in the oven for 20-30 or until edges are bubbly!

Good day. Went down even though I ate at 2 restaurants yesterday. Had Chinese for lunch. Picked steamed ginger shrimp and broccoli, no rice. The sauce was thin and had no cornstarch. It didn't taste sweet so I think if it had sugar it wasn't much. The sauce was like a soy garlic ginger.
For dinner, I had pot roast at a restaurant. No bread and replaced the potato with extra vegetables. They gave me snow pea pods instead. There was also spinach and muchrooms. The sauce was thick, but gluten free, so maybe it was thickened with something I shouldn't have, or maybe just reduced. Guess I could have asked more questions. At least my weight went down even if slightly! Oh and I had 2 of those low carb cookies from yesterday with a couple of teaspoons of carb smart ice cream in the middle for a home-made ice-cream sandwich. I thought for sure I would not see a loss this morning but I did!

Well a tiny bump up after the drop. The usual! Not going to worry, it is just that water in the cells! My SO made some low carb cookies for us last night instead of his usual full of sugar stuff! They were made with almond butter, Ideal sweetener, Hersheys special dark sugar free chocolate, salt, baking powder an an egg. They were good. They ended up being a slight tad over 2 nc per cookie.
