Hi, I hope someone was able to answer you. I know that when I stopped eating certain foods I went through "withdrawls". It really is like detox, you're body needs time to adjust. Hope this helps.

Length of Workout
Cardio is great, however, adding reps of weight training is good. It helps tightening your muscles while your body adjusts.
But keep doing what works for you, because everyone is different.

How Often Do you weigh yourself?
I would say one or twice a month. Me being obsessive about losing weight, weighing daily can detour me from my goals. For me I weight once a month. That's all I can handle. I think each person is different.
