My weight loss is slow on the New Atkins. It's good, but slow. I think I may be resistant. I've been eating under 20 carbs a day for several weeks now. I'm never hungry. But, if I get close to 20 carbs I start to gain. I have a sweet tooth. I don't eat any sugar or bread...but, I do use splenda. I need some ideas to stop the cravings. I do try to make sure I eat enough veggies a day in carbs. I like veggies, but I can't keep them around the house because no one eats them but me. I probably eat 5 cups of lettuce a day. That is my favorite. I like cabbage, mushrooms, peppers, tomatoes...not a huge fan of celery, but will eat it. How am I supposed to maintain on Atkins if I have to eat less than 20 carbs? Way less. I think maybe I should increase my fiber. I notice that it is extremely low. HMMMMM.

I'm testing out a new breakfast/meal bar. It's homemade and high fiber and low carb. I tried a prototype yesterday and I did not eat until lunch time. I was full after I ate it. So last night I made 6 bars. The bars are made out of flax meal, almond meal, and organic peanut butter. I also added a 1/2 teaspoon each of cinnamon and sucralose. The reason I decided to make this is because I realized that my fiber intake was extremely low. Like on average about 5 grams per day...TOO low. I'm rounding up to the nearest decimal (because it literally is too close); this bar has 10 grams of protein and 6 grams of fiber. The protein gives me energy for my morning work out and the 6 extra grams of fiber lets me increase my overall fiber count to 10-11 grams per day. There is only 230 calories. The total carbs for this bar is 3.42. If I know I might have a busy morning, I add a vanilla atkins shake for breakfast and I still do not feel like I need to cut back later in the day. I am not an expert on gluten free eating, but I think these are gluten free too.
