Packaging Vegetables as Junk Food
It seems that I may be the exception. I like to cut vegetables and make interesting salads and fresh fruit. I think that key to learning to like that part of meal prep is investing in a good knife. I bought a Shun Classic 7-Inch Santoku Knife. It was expensive but the knife coupled with a set of stones to keep it razor sharp makes cutting vegetables a pleasure. I would suggest getting a 6" chef or Santoku knife sharpen it and then see how you feel about it after some practice. There are youtube videos on technique for cutting that can make a huge difference as well. I don't think that I could do veggies with-out my knives.
